One of my favorite go to recipes! My whole family loves it and I love how quick, easy and adaptable the recipe is. I often modify this recipe to fit what I have on hand at the time I am making a batch. I have used only honey and no agave, I have used all maple syrup in place of honey and agave, I have added cinnamon and cardamom, I have used a variety of nuts and seeds (again depending on what was in my cabinet at the time I was making a batch). This can be used as a granola that I can grab on the go with a piece of fruit or I can put in a bowl and pour “milk” over it to eat as bowl of cereal topped with fruit like blueberries, strawberries or banana. For “milk”, I use almond or coconut milk. Also I like to store the granola/ cereal in the refrigerator, make it crunchier, more like granola or cereal! Another adaptation for this recipe is I can add it to baked or sauteed apples for an “apple pie” fix. Truly a versatile recipe that the whole family will enjoy!

Ingredients:
1/2 c honey
1/4c agave nectar
1/2c coconut oil
2tsp vanilla extract
2 cups almonds (or pecans)
1 cup almond meal
1/2 cup pumpkin seeds
3/4c sunflower seeds
1c unsweetened shredded coconut
2tsp cinnamon

Instructions:
1. Preheat oven to 325
2. In a large microwave safe bowl,  combine the first 4 ingredients and heat on 50% power until coconut oil is melted
3. In a large food processor, combine the rest of the ingredients and pulse to your desired consistency. I leave mine a little chunky for texture
4. Add the dry ingredients to your liquid ingredients and stir to combine
5. Spread into a single layer on a baking sheet (make sure it has an edge) and bake for 10 minutes. Stir and then bake another 10 minutes, or until it is lightly browned (your house is going to smell amazing)
6. Cool completely and then transfer to an airtight container for storage.
